Kickin Kvass

kickin kvass

If it seems like every drink out there falls on the sweet side, you’ll love being able to add this to your list of non-alcoholic Valentine’s drinks. Fair warning – this drink needs time to ferment so you’ll need to make it ahead of time. Kvass has its origins in Eastern Europe. Many versions exist but we felt this beet kvass was the perfect savory option to offer for Valentine’s Day drinks. Make sure you have –

3 beets – trimmed and chopped into 1/2 ” pieces

1 tsp sea salt (you want high-quality here)

2 cups filtered water

Optional add-ins – ginger, turmeric, citrus fruits, sriracha

Instructions:

Wash the beets well using filtered water. Trim the stem and root tip from each beet but do not peel them. Cut beets into half-inch pieces.

Add chopped beet pieces to a 1-quart mason jar until halfway full.

Next, add the sea salt (white or pink Himalayan will work), then pour water into the jar. Reserve about an inch of head space from the top, fasten the lid well, and give it a good shake.

Secure the lid on the jar, and shake well to combine.

Leave the jar out in direct sunlight for 5 – 7 days. The longer you leave the jar out, the stronger the flavor will be. Make sure to release pressure from the jar each day by unscrewing the lid. Do not remove it. Simply unscrewing the lid and tightening again will release pressure and keep the jar from breaking.

After 5-7 days taste the kvass. If it is fermented to your preference you can now strain the mixture and refrigerate it. If you’d like a more developed flavor leave it out to ferment longer.

Kvass can be kept refrigerated for up to three months.
