5 cardamom pods

½ cucumber

1 chamomile teabag

2/3 cup mint leaves , plus extra for garnish

1 strip lemon zest

5 cloves

10 sprigs rosemary

3 oz tonic water

3 dashes Angostura bitters

ice

Instructions:

Bruise the cardamom pods. (To bruise a cardamom pod, place the pods on a flat surface and gently push down with the flat side of a large knife, partially cracking open the pod. Bruising releases cardamom’s oils and helps it mix with the other flavors in the drink.)

Slice the cucumber. Place cardamom and sliced cucumber in a large jar or pitcher. Add the chamomile teabag, mint leaves, lemon zest, cloves, rosemary, and Angostura bitters. Add 2 1/2 cups cold water. Infuse in the fridge for 2-4 hrs.
